ITO•Kaya and SunLife Organics bring culinary distinction to JEM

‍

The JEM adds an everyday layer of exceptional cuisine and wellness fare to life at the residences, welcoming two new partners to the building: ITO•Kaya, a Japanese dining concept from the team behind the acclaimed omakase favorite ITO, and SunLife Organics, the Malibu-born superfood café with a cult following.

‍

Miami has evolved into a global destination for dining and lifestyle, and we wanted JEM to reflect that in a way that feels natural. We’re curating the right mix by bringing in concepts like ITO•Kaya and SunLife Organics that people can easily enjoy every day.”

Haute Omakaze

‍

ITO•Kaya is the more social sibling of ITO, the omakase counter with locations in New York and Las Vegas. Where ITO is an intimate, chef-led experience, ITO•Kaya takes a livelier, more energetic format while holding to the same standard of quality and attention to detail.

The concept comes from VCR Group, the hospitality team behind New York’s members-only Flyfish Club. Led by partners David Rodolitz, Gary Vaynerchuk, Conor Hanlon, and Chef Josh Capon, VCR is known for experience-driven dining built around a strong sense of community. For ITO•Kaya, the group partners with Michelin-starred Chef Masa Ito and Chef Kevin Kim.

The menu centers on shareable plates, alongside nigiri, sashimi, and skewers, with a bar program of cocktails, sake, and Japanese whiskies. Chef Ito describes the dishes as bold and balanced, designed to work equally well for a full dinner or a spontaneous visit.

For residents, ITO•Kaya extends well beyond the dining room. Service will be integrated into the building’s amenity deck and private residences, making the restaurant a natural part of daily life at The JEM.

‍

SunLife Organics began in Malibu with a simple idea: clean, nutrient-rich food made from thoughtfully sourced ingredients. Its organic smoothies and superfood bowls have since built a loyal following, grounded in quality, community, and a holistic approach to wellness.

At The JEM, the café will offer a health-forward, all-day menu for residents and visitors, serving the amenity pool and the surrounding areas. A morning smoothie before the gym, a bowl between meetings, a refreshment by the pool: wellness becomes part of the routine rather than an occasion.

‍

Miami has become a true hub for wellness, and our focus on quality ingredients and feel-good offerings fits perfectly within the city’s vibrant, health-conscious lifestyle.”
